The Verdict Is In

"Don't knock it till you try it." This phrase applies to many things. Last night, it applied to some beet cupcakes from the Vanilla Garlic blog. When I first saw this recipe, I knew it was something I'd like to try. There are no pictures to share of my adventure, but Rob and I can both say, they turned out very nicely! Now, I haven't added the yummy chocolate ganash (sp?) on top...yet, but that can only make the cupcake better, right? The only time-consuming step is roasting the beets for an hour, then letting them cool. But you can do that anytime and save them for baking later.

I put beets in my chocolate cake all the time. I use canned beets...it saves a lot of time (I make a bunch of puree and freeze them).
